LEEK AND MUSHROOM OMELETTE

INGREDIENTS

Half a leek
One whole pepper
A handful of cherry tomatoes
A few mushrooms
Feta cheese
2 eggs
Almond milk
Teaspoon of olive oil

RECIPIE

  1. Chop up your leek, mushrooms, tomatoes and pepper.
  2. Place a frying pan on a low to medium heat and add a teaspoon of olive oil. Fry the leek and peppers until soft. Add in the mushrooms and tomatoes and stir.
  3. Crack two eggs and whisk together with a splash of almond milk in another bowl. Pour into to the frying pan and sprinkle your feta cheese on top.
  4. Leave to cook until the bottom side is a golden brown then transfer to a grill and leave until the top is fully cooked.
