1. Chop your veggies of your choice (I picked what was left in my fridge.. mushroom, courgette and cherry tomatoes) and fry in olive oil/coconut oil
2. Add two fist full heaps of kale and sprinkle some pepper and chilli flakes for some heat!
3. Crack your eggs and add some feta 
4. Place under the grill until egg whites are cooked to your desired preference

And…Voila! 🍳👅
